Roberto Herrera owns and operates Finca Ojo de Agua, a 1.5 hectare farm located in the Chirinos municipality of Cajamarca. It is part of the cooperative Lima Coffees. The farm is located at 1870 meters above sea level, and that altitude helps to contribute to the sweetness in the cup. This coffee is a single variety known as Marsellesa. This is a relatively newer variety developed for its balance between resistance to common coffee tree diseases, overall yield and cup quality. It is known for producing a sweet cup profile with higher acidity.
During harvest, only the ripest cherries are selected for processing - this is known as “selective harvesting.” Those cherries are then depulped the same day as picking. Once depulped, the coffee is fermented without water for an average period of 28-35 hours and then fully washed 3 times with clean, spring water. The coffee is then moved to raised beds inside a covered dryer (to allow even, thorough drying). After the 15-20 day period that it takes to properly dry these coffees, Roberto then places his coffee into bags and stores them in a cool, dark room. They are then delivered to Lima Coffees for cupping, milling, and export.
This meticulous level of care leads to a phenomenal cup! Expect a crisp, juicy and floral cup with limeade, mango and wild honey flavors with a deep, lingering sweetness.

We roast and ship on Mondays and Thursdays. Orders placed Thursday through Sunday at midnight will roast and ship on Monday. Orders placed Monday through Wednesday at midnight will roast and ship on Thursday.
