Last year, we connected with the Colombian importer Cofinet. We’d been fans of coffees from Colombia for a long time, but the coffees we tasted from Cofinet were exceptional across the board. Upon tasting their selections from that year’s harvest, it was clear that a lot of care and attention went into their production - from rare and experimental lots to the more basic regional lots. After talking with them and learning about the company, it was clear that this is a group that we wanted to support. Cofinet is run by a family of coffee farmers that has been in business for 80 years. In 2015, they began exporting coffee with the aim of further developing the specialty scene in Colombia by assisting other farmers in producing outstanding coffees that will guarantee a high premium for their hard work. When looking at this year’s offerings from Cofinet, we decided to do something fun: offer two coffees from the same producer, but with each coffee processed differently!  (“Processing” refers to the technique used to remove the coffee seed from the fruit.) In presenting both of these coffees, we are able to highlight how processing can affect a coffee's flavor. The two coffees from Luzmila Gonzales fit the bill perfectly for that goal - one being a washed-process and one being a honey-processed! 

 

Doña Luzmila Gonzales is a first generation farmer that has been growing coffee on her 10 hectare farm, El Oasis, since 2008. With the help of her community, the farm began producing great coffee within just 4 years. In her time since starting the coffee farm, she has moved towards organic growing practices and even got Organic certification. Every year, Luzmila participates in the local coffee competitions and is always among the finalists. Together with her husband, Eider, and their 4 children, they manage the farm growing coffee, beans, and fruit as well as running a business in town selling clothes and beauty products.

 

This lot from El Oasis is a honey-processed Caturra. Caturra is a variety of Arabica which is a naturally occurring mutation of the Red Bourbon variety and which is known for its high quality, yield, and disease resistance. After harvesting, the coffee skin is depulped from the cherry, leaving the fruit. Then it goes through a 35 hour dry fermentation process, after which it is dried on raised beds until it reaches an ideal moisture level. 

 

Look for a big, nectary, fruit-forward cup, with flavors of blueberry, lychee and key lime.

We roast and ship on Mondays and Thursdays.  Orders placed Thursday through Sunday at midnight will roast and ship on Monday. Orders placed Monday through Wednesday at midnight will roast and ship on Thursday.
