We are excited to offer this phenomenal coffee! It is a single-variety, natural-process coffee that exemplifies what care and intention in processing can lead to in the cup. 

It comes from the Yaye Washing Station and is part of a collaborative project between our friends at Cafe Imports and exporter Testi Coffees. Their goal with this project was to create a highly traceable, single-variety offering using very intentional cherry selection. This coffee is the product of 50 smallholder farmers from the neighboring villages of Yaye and Chericho. 

Yaye Washing Station started in 2021. Its attention to detail at every step has already earned it a great reputation in the specialty coffee world. Along with this focus on quality, it is also committed to serving the communities in its area, emphasizing building schools and providing school supplies to youth. 

The coffee cherries for this lot were collected from farmers at elevations ranging from 2150 to 2300 meters above sea level within a 10-km radius of the washing station, and are all of the variety known as 74518. The coffee was harvested over a four-day period, and each day’s yield was collected between 3:00pm-7:00pm in order to prevent uncontrolled fermentation. The cherries were cleaned, poured onto raised drying beds and hand-sorted to 95% full-ripe and 5% overripe in order to balance sugar content and complexity. 

After sorting, the raised beds were covered in a shade net to slow down the drying process to an optimal 12%, which maximizes flavor development and preservation. After drying, the cherries are removed from the raised beds and rested for six weeks. 

All this strict attention to detail really shows in the cup. This is a heavy, dessert-like coffee featuring flavors of blueberry, strawberry, fresh cream and light florals with a velvety body. This is a phenomenal offering that we are excited to share with you!

All coffees are available in whole bean only. 

We roast and ship on Mondays and Thursdays.  Orders placed Thursday through Sunday at midnight will roast and ship on Monday. Orders placed Monday through Wednesday at midnight will roast and ship on Thursday.
